WHere is an easy version of a beverage found on the seasonal drinks list. This is a large-volume prepared mix that is bursting full of tastes of the holiday season, which makes it ideal for a celebration. Any leftover cordial for morning drinks, desserts, or to mix additional servings of bikinis.

For the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Citrus Syrup: Place the listed components in a pan, heat until it reaches a simmer, agitating so the sugar melts. Then, take off the heat allowing it to cool entirely. Pour into a sealable bottle, close it and store chilled, it can be stored for around one month.
For the Cocktail Base: Mix all the liquids into a sizeable container, allow it to infuse for 60 minutes, then strain best through muslin, to ensure it's completely strained.
For serving: Measure 85ml of the premix into a cocktail shaker containing ice, and stir carefully for one minute to cool it down. Filter to a frosted cocktail glass or equivalent, garnish with some cranberries adding the final touch by giving it a light spray with the mandarin essence over the drink.
